Harness the colours and flavours of autumn: The ultimate thanksgiving salad
PEACH, CHERRY, TOMATO & BURRATA SALAD, GARNISHED WITH BASIL, DILL, PUMPKIN SEEDS & BALSAMIC GLAZE
Perfect for adding a splash of autumnal colour to your Thanksgiving table, this mouthwatering salad will have your guests hungry for more.
What better way to give thanks than sharing wholesome dishes with friends and family. This delicious Thanksgiving recipe was inspired by the gorgeous colours of autumn, from crisp red and gold leaves to dazzling bronze acorns and chestnuts.
3 ripe peaches, pitted and cut into eighths lengthways
250g cherries, pitted and halved
300g plum tomatoes, halved
2 x 100g balls of burrata
Bunch of basil, chop half
Bunch of dill, chop half
50g pumpkin seeds
1 tbsp honey
2 tbsp balsamic vinegar
1 tsp lemon juice
1 garlic clove, grated
2 tbsp extra virgin olive oil
2 tbsp balsamic glaze to serve
In a bowl, mix the tomatoes, cherries and peaches with the balsamic vinegar, extra virgin olive oil, garlic, chopped herbs, honey and lemon juice. Leave to sit for 10 minutes to allow the vinaigrette to be absorbed.
Place the fruits onto a large serving platter and break the burrata into pieces over the salad.
Drizzle over a balsamic glaze, tear up the remaining herbs and sprinkle over the salad with the pumpkin seeds.
